Chicken and Orzo Soup

This is a fast and easy go to soup! You can’t mess it up!

SUBSTITUTIONS

Meatballs:  I use compliments life smart turkey meatballs but any frozen meatballs will work. 

Pasta: I use orzo pasta but any small pasta will work.

RECIPE

6 - 8 Servings


 8 Cups chicken broth

1 595g box lean turkey meatballs

1 cup uncooked orzo pasta

3 cups fresh spinach

1/2 cup grated parmesan cheese

salt and pepper to taste

INSTRUCTIONS

1.  In a large pot, bring the chicken broth to a boil

2.  If you want the meatballs browned, cook them first to package directions.  Or, toss in the frozen meatballs.
3.  Add the orzo pasta when the soup started boiling again.
4.  Let the soup simmer for 10 minutes or until the pasta is soft.
5. Stir in the spinach (it will shrink) and cook for about 3-5 more minutes. 

6.  Remove from heat. Stir in parmesan. 

7. That‘s it!  It’s ready to eat!
